Italian Dishes Old and New

 

Though I’m only a quarter Italian, Italian dishes have always been a staple in my life. My dad had to have his weekly spaghetti. My grandma on my mom’s side was from Spain, but she made beautiful handmade gnocchi and chicken cacciatore. Our holiday dinners always included a side of ravioli. When I started cooking, those dishes were easy for me to carry forward. And I devoured Italian cookbooks to learn how to make many more Italian dishes. I always added my own personal touches, however, or created my own specialties. Oh, those flavors!
